Religious sites remain active spaces; opening hours and access can change around services. The river is most useful as an organizing edge and evening walk, not another isolated pin.
Decide how much aerospace belongs in the trip
Cité de l'Espace is a substantial museum complex outside the historic core. Give it most of a day if space exploration genuinely interests you, check language and show schedules, and plan transport both ways. Aviation enthusiasts may prefer Airbus-related experiences, which can require advance reservation, identification and separate logistics. Neither belongs in a casual spare hour.
The Canal du Midi passes through the city but its romantic rural stretches are elsewhere. Toulouse's markets and food traditions work better as meal anchors than as a checklist of cassoulet, sausage, violets and pastry compressed into one afternoon.
